Back home in Senegal, we make a lot of drinks, if not all, juices at home. Masset got us used to making them from a very early age. One of the juices we hated to make in particular was… Ginger Juice. First, we had to go to the market and buy the roots; then, once home, we’d wash them very well to remove any trace of dirt and sand before starting to peel them. Next, with the pestle and mortar, we had to make sure to have ground them in order to obtain a paste without any chunk of Ginger. Using a light piece of cloth, we would drain the ginger then add water, pineapple juice, lime juice, anise and sugar before refrigerating it and serving it fresh to all.
