Frequently Asked Questions
It varies. Stored correctly, some herbs and spices will maintain peak freshness up to a year, but others lose flavor more quickly. Ground spices have the shortest shelf life. Ground cumin and cardamom lose their flavor very quickly, while peppercorns and hard seeds like annatto or nutmeg may up to a year. Herbs like thyme and rosemary should be used within six months for peak flavor. When in doubt, we recommend using your nose. If your spices don’t smell like anything, they are not likely to taste like anything, and it is time to replace your supply.
Some people insist that a refrigerator provides an ideal environment to store spices due to its dark and cold nature. Unfortunately, humidity can cause the flavor of various spices to alter or for the spices to even grow mold or bacteria. For this reason we do not encourage storing spices in a freezer or refrigerator unless they have been vacuum sealed.
In addition, avoid storing spices in cupboards above heating elements as ambient heat can cause spices to spoil more quickly.

Similarly to oils, clarified butter goes rancid after you store it for too long. Thus the reason why it would have a distinct odor and sour flavor
The butter can be stored in the fridge, the freezer, or covered on the counter. While most people store their butter in the fridge, all types of butter can be frozen without noticeably affecting quality.
